West African Peanut Soup

Yields1 Serving

 2 cups onions, chopped
 1 tbsp Planters Peanut Oil
 ½ tsp cayenne
 1 tsp peeled ginger root
 1 cup carrot, chopped
 2 cups sweet potatoes, chopped (or use 1 cup white potatoes)
 4 cups vegetable stock (or water)
 2 cups tomato juice
 1 cup Planters Peanut Butter, Smooth
 1 cup scallions, chopped (or chives, chopped)
 ½ cup Planters Cocktail Peanuts, chopped
 1 tbsp sugar (optional)

Sauté onions in peanut oil until they are translucent. Add cayenne and ginger. Stir.

Add carrots. Continue to sauté for 2-3 minutes.

Add potatoes and stock. Stir.

Bring to boil. Let simmer until vegetables are tender (about 15 minutes)

Add mixture, tomato juice to blender or food processor. Purée until smooth. Return mixture to pot.

Stir in peanut butter until smooth.

Add sugar if extra sweetness is desired. Top with chopped scallions/chives and peanuts. Serve.
